Lunch on a Hot Day

When July heats up, and cooking over a hot stove becomes uncomfortable, salads really come into their own.


Today we stoked up on antioxidants (a very dull description for such beautiful things as cherries and blueberries) and leafy greens (which somehow sounds much nicer - makes me think of a breezy forest).


Fresh crusty rolls (baked in the cool of the morning) and two kinds of cheese - one sharp, one creamy - made the perfect accompaniment to spinach salad drizzled with refreshing ginger-cardamom rice vinaigrette.

Add one beloved husband and serve in a cool shady room. Summer lunch doesn't get much better.

  1. Oh, looks delicious! Would you mind posting the ginger-cardamom rice viniagrette recipe? That sounds wonderful too! (P.S. a very beautiful dish, that.)

    1. I don't really have a recipe, Marigold - it's just rice vinegar and oil with some brown sugar, a dash of salt, and ginger and cardamom to taste. I think I threw in some nutmeg too. I didn't measure anything, but a 1:2 ratio of vinegar to oil would probably work. I used extra virgin olive oil, but a nice cold-pressed nut oil would taste even better. (We all have cold-pressed nut oils sitting in our pantries, right?) :)

  2. That sounds soooo refreshing right now. I have been preparing my kitchen for painting tomorrow while hubby tiled a backsplash for me and my dad finished some drywall. The house is a mess and I am warm and whooped. This salad looks like waters of ambrosia!

    Hmmmmmm, *winging* their way is a wee bit tooo poetic for transfer of books, through out our library system. Transportation of books, is probably done, in an old station wagon. ,-)

    Oh wow, does anyone use that word anymore???? STATION WAGON? Probably not. "Auntie" is showing her age, again. -gigggles-

  4. Errrr... and the Lactose Intolerant business, as to why the roll and cheese are off my list. Well, other than goat cheese, that is.

    Oh Oh, I'm gonna' get a Harumphhhhhhhh for "Marigold," for saying that! In that *flippent* way! Oh wow! I'm in-for-it now.

    Plus! I didn't spell *flippent* correctly and Mrs. Micawber will be after me too. Eeeek! I'd better just scooooooooooooooooooooooot.

  6. We eat a lot of really big salads for dinner. Yours looks yummy.
    Can't wait for some home grown tomatoes. It will be a while yet.
